| Wednesday was a big day in the Pony classroom. In addition to traveling to some National Parks in the desert region, we also spent the morning cooking cactus! |

| After the spines were removed and the cactus was rinsed Maddie cut some cactus strips into little pieces |

| Gigi rinsed all of the cut cactus pieces. Next the cactus was cooked with some oil and salt. |
